#SOL21 | 28 | Some Assembly Required

Last weekend, my mom requested that I make a dessert for Easter this Sunday.  I pointed out that it wasn't Easter yet, but she countered with the fact that she wanted to celebrate early while my brother was still in town.

"Alright," I said, "Did you have something in mind?"

"What about an ice cream cake.  It's not very Easter, but it could be nice."

I hesitated.  I watch a lot of cooking shows and all the hazards of ice cream cake on those shows flashed before my head.  Mostly I was picturing the swiss roll swirl cake and the fancy decorations of The Great British Baking Show.  Could I do that?  I'd been trying new recipes, but I wasn't sure I was ready for that.

My mom saw my hesitation, "It's not what you think.  Gail was telling me about it.  You can make it from ice cream sandwiches."

"Really?"

"Yeah.  Let's look."  And so mom and I did a quick Google search and, sure enough, there were plenty of suggestions for simple ice cream cakes made from assembling 24 ice cream sandwiches, 16 oz of Cool Whip, and your toppings of choice.  I went with this one.

It was probably the easiest recipe I had seen in awhile.  So easy it feels like cheating to even call it a recipe.  An assembly perhaps?  Regardless, yesterday I went to the store for the ingredients and, to help my mom's desire for an Easter theme, grabbed a few additions to add to the cake.  

Easter Sprinkles, Reeses Candy Eggs, Easter Bunny Ear sticks.

As I expected, it was super simple to make and it was as sweet as imagined.  We spent much of our time eating it discussing the various ways we could "riff" on the assembly and make it our own: crushed Oreos, chocolate and caramel syrup with crushed peanuts, or even picking up Neapolitan Ice Cream bars and slicing Strawberries and using strawberry syrup on top.  

Yum. 

I have to say, an easy to make dessert is somehow that much sweeter.

  2. I've seen this recipe and have wanted to try it! I mean, it seems fail-proof, right? I need more of that in my life right now. Some CERTAINTY. I made a recipe story today, too, only mine had more derails. Thank you for sharing your story, as I'm adding this one to my own list to try. :-)
